About this place
역전회관은 1962년에 바싹불고기를 처음 개발한 식당이다. 강한 불로 재빠르게 바싹 구웠다고 하여 바싹불고기라는 이름이 붙여졌다. 매일 아침 마장동에서 불고기의 원재료인 싱싱한 소고기가 배달되어 오고, 개발된 양념레시피 그대로 양념하여 고기에 입혀 숙성일 시킨다. 이후 가장 중요한 요리도구인 석쇠로 육즙이 살아있도록 특유의 불향을 가득 담아 강한 불에 재빠르게 구워낸다. 요리된 바싹불고기는 깻잎과 궁합이 좋아 함께 싸서 먹으면 더욱 맛있다.
