About this place
서관면옥의 평양냉면을 만들어주는 메밀 재료는 100% 국내에서 생산되는 단메밀과 천연의 건강 기능성 물질을 함유하며, 영양학적으로 효용 가치가 높은 쓴 타타르메밀 (F.tataricum Gaertn)이라는 쓴 메밀을 섞어서 사용한다. 평양냉면을 만들어주는 육수는 국내산 한우 암소를 사용하며, 소고기 양지, 사태 부위를 3시간가량 끓여 기름 찌꺼기를 소창에 걸러내어 만든다.
