부흥국수의 대표 메뉴는 비빔국수이다. 오이, 당근, 치커리 등이 푸짐하게 올라간 고명에 얼음이 동동 뜬 새콤달콤한 육수가 더운 여름날 잃어버린 입맛을 돋운다. 부흥국수의 특징 중 하나는 스스로 만들어 먹는 메밀전이다. 식당 입구에 반죽과 팬이 있어 각자 취향껏 만들어 먹을 수 있다. 1인당 1개씩 만들 수 있고, 특별한 고명은 없지만 쫄깃한 맛이 일품이다.
