리애는 국내 3% 프리미엄급 YLD 지리산 한돈을 10일 이상 3차 교차숙성(습식숙성+건식숙성+빙온숙성)시킨 최고급 숙성육만을 사용한다. 드라이 에이징에 의해 의해 돼지고기 특유의 이취가 제거되고 연화되어 고기 본연의 질감과 풍부한 육즙을 맛볼 수 있다. 리애의 대표메뉴는 프리미엄 로스(등심)까스로, 돼지 한 마리에 5인분만 나오는 특상등심부위로 튀겨낸다. 이외에도 히레(안심)까스와 생선까스, 에비(새우)후라이 등의 메뉴도 준비되어 있다.
